#44: Utah – Dutch Oven Potatoes
In Utah, cast iron gets more action on the 4th than fireworks. Dutch oven potatoes—layered with bacon, onions, cheddar, and cream—are assembled early, buried in coals, and left to simmer into golden perfection. The tradition dates back to pioneer days and continues to live on in Scout troops, church picnics, and family reunions.

You’ll find them on picnic tables in Zion, backyards in Provo, and pretty much anywhere people gather to celebrate. It’s rustic, hearty, and undeniably satisfying. With each scoop, you taste smoke, history, and the kind of dish that doesn’t need updating. Some recipes get it right the first time.
