From the outside, it looks simple: golden bread wrapped around beef, cabbage, and onions. But in Nebraska, the Runza is a point of pride. Adapted from Eastern European pirozhki, it became a household name thanks to homemade recipes and roadside restaurants.

On the 4th, it often replaces burgers as a cookout staple, especially when prepared in large batches for large families. It’s easy to carry, tough to forget, and endlessly adaptable. The filling’s savory warmth pairs perfectly with picnic salads and cold drinks.
